You know summer's really almost over when people start buzzing about Starbucks and their infamous pumpkin spice latte. The company's Facebook page is asking that consumers vote for which city should get the sugary drink first–but if you can't wait (or you want a healthier version), there are plenty of DIY pumpkin spice latte recipes available online.

Aside from being full of additional calories and sugar, the pumpkin spice latte syrup used by Starbucks (and its similar brethren that other coffee shops carry), can contain hidden ingredients that may not jive with your diet or lifestyle. For one, conventional pumpkin spice syrup is made with dairy solids–so even if you get yours made with soy milk, it's not vegan.

Additionally, it's got those pesky “natural and artificial flavors,” which, by law, don't really need to be spelled out. That means, for those with celiac or other diseases that lead to gluten intolerance, the PSL may not exactly be friendly to their diet.

But that doesn't mean that folks with alternative dietary desires and lifestyles have to sit this fall treat out entirely. There are plenty of crafty bloggers and foodies out there who have developed awesome spins on the original. Here are just a few to help you get your creative, autumnal juices flowing.

  • Last year, we featured an adapted recipe from Megan's Cookin', which offers the added bonus of actual pumpkin and all of the health benefits that come with it. It's a real winner and is, conveniently, vegan.
  • Instead of making a pumpkin-y simple syrup, Averie Cooks had the genius idea to make pumpkin spiced milk (which can easily be of the non-dairy variety). So even if you're not a coffee drinker, you can totally get down with this sweet treat. She also advises using a non-sugar sweetener.
  • Already had your coffee today? Try this super-tasty pumpkin spice smoothie from Healthful Pursuit. It's dairy-, sugar-, yeast-, and gluten-free. You're welcome.
  • And if you're in a hurry, this ultra-quick, latte-for-one recipe from Chocolate-Covered Katie will take you almost no time at all. Just be sure to wave at all the folks from your office who are waiting in line for a similar, but less good-for-them treat.

Do you have a favorite take on the pumpkin spice latte? We'd love to see them. Share your recipes and variations in the comments!
