Some people stress over supper. Not me. For me breakfast is the toughest meal of the day. My family EATS. No one is overweight (I could stand to lose 20 lbs for sure) but they eat like Sumo Wrestlers on steroids, I swear.

We have chickens so our organic eggs are both free range..and FREE. Imagine the cost of cooking 3-4 eggs per person for a husband and 6 children. Add to that biscuits, freshly made…or homemade granola or muffins and you get the $ $ look in my eyes.

Anyway, you can use OAMC to make breakfast time easier. Check out this recipe for make ahead french toast. Yum.

French Toast Casserole
8 cups cubed raisin bread, stale croissants, or french bread

2 granny smith apples, peeled and chopped

3/4 cup packed brown sugar

8 oz cream cheese (16oz. if you want. You can never have too much cream cheese)

1/4 cup sugar

3/4 cups half and half, divided

2 tsp vanilla, divided

1/2 cup pecans

Place half the bread cubes in a greased 9 X13 dish; top with apples. In a mixing bowl, beat the cream cheese, sugars, 1/4 c half and half, and 1 tsp vanilla until smooth; stir in nuts. Spread over apples. Top with remaining bread cubes. In another mixing bowl, beat the eggs, and remaining half and half, and vanilla; pour over bread. Cover and freeze, with these instructions on the label:
Thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Bake, uncovered at 350 for 35-45 minutes or until a knife inserted near the center comes out clean.
Serves 8

You can also make these in muffin tins for individual servings. Just spray the muffin tin well, flash freeze, remove frozen french toasts to freezer bag to store. When you are ready to make, put frozen french toast back into muffin pans that have been sprayed with cooking spray, thaw overnight and bake for 15 -20 minutes.

Once A Month Cooking Tip of the Week – put the meals in the freezer in order. If you have a chest freezer this means putting the end of the month meals on the bottom and working up.
