Happy National Grilled Cheese Day! Our Fave Ways To Put A Healthy Spin On This Comfort Classic

Today, April 12th, is National Grilled Cheese Day! Who wouldn't want to celebrate the cheesy deliciousness of everyone's favorite hot sandwich with, well, everyone's favorite hot sandwich? (Hat tip to tomato soup, too, of course). Grilled cheese isn't exactly healthy, though. And while it's ok to indulge in some processed American cheese and plain white bread every once in awhile, we suggest celebrating in a slightly more nutritious fashion. Here are our tips for a healthier grilled cheese!

  • Try it without bread! Natalie Paramore of Food Fetish has some truly awesome suggestions for breadless grilled cheese, including using portabella mushrooms in place of the gluten-y stuff. Brilliant! 
  • Add some veggies! Add spinach, arugula, tomato, caramelized onions, grilled zucchini or other veggies to your sandwich. Not only will it add additional flavor, it'll add in some additional fiber and vitamins, too.
  • Pick your cheese carefully! Using organic or artisanal cheeses will likely cut down on the amount of weird chemicals in your food. Plus, using full-fat cheese adds more flavor so you can use less cheese overall. Try a slightly fancier cheese like brie or chevre (which aren't super expensive) or go all out with a really expensive, stinky variety.
  • Make it open-faced! An easy way to cut calories is to just use one slice of bread. We know it's not the same, but it's just a suggestion!
