11 Healthy Recipes That Let You Eat Cookies For Breakfast

By  |

Thank you, Pinterest gods, for introducing me to the brilliant concept behind BREAKFAST COOKIES. Before I started scouring recipes on the internet for embarrassing amounts of time, I never knew that there were so many ways to accidentally eat a healthy breakfast while also indulging in baked goods. If you know a picky eater (or if you happen to be one yourself!), try one of these 11 recipes to turn breakfast into a cookie party!

1. Back-to-School Breakfast Cookies.

Don't let the fact that this recipe comes from a mommy blog scare you off. If these cookies are good enough to get a kid excited about going back to school, they're good enough to get you out of bed on a Friday morning.

2. Homemade Breakfast Cookies.

I love when cookies like these still have visible whole oats in them after they're done baking. It lets you pretend like you're eating something perfectly healthy, rather than something mostly healthy and partially full of chocolate.

3. Healthy Banana Oatmeal Breakfast Cookies.

Oatmeal with banana and raisins is a healthy breakfast, so why shouldn't you eat it in cookie form? You still get the nutrients and protein, just with the bonus benefit of feeling like you're eating dessert.

4. Quinoa Carrot Cake Breakfast Cookies.

You had me at “carrot cake.” These look too good to be true. Like a Reese's Puffs cereal for adults. That won't give you diabetes as quickly.

5. Pumpkin Oatmeal Breakfast Cookies.

I'm a very active member of the pumpkin fan club, and these are probably a much better use of calories than my Pumpkin Spice Latte, as much as it bugs me to admit that.

6. No Bake Healthy Breakfast Cookies.no bake healthy breakfast cookies

A healthy breakfast… in the shape of a cookie… that I don't have to bake. Yes. Yes. A thousand times, yes.

7. Chewy Chocolatey Breakfast Cookies.

These look like fudgy brownies, but you're allowed to eat them first thing in the morning without guilt! Because someone on the internet said so! I'm in!

8. Blueberry Coconut Pecan Breakfast Cookies.

This looks like a work of art. It looks like it belongs in the Louvre. My stomach first, then the Louvre. Then my stomach again.

9. Sneaky Carrot Cookies.

Is it wrong that I really love recipes with hidden vegetables inside that are meant to trick kids and picky eaters into getting vitamins? I have no problem with carrots, but if you can sneak them into my cookies, I'm even more down.

10. Gluten Free Peanut Butter Breakfast Cookies.

I'm totally making these for my gluten-free nephew and niece ASAP. They're adorable. (The cookies, I mean… but my sister's kids are pretty great, too.)

11. No-Bake Cinnamon Roll Breakfast Cookies.

I can totally see myself inviting a bunch of girlfriends over for a Sunday morning brunch and pulling these out after a few mimosas. Cute, easy, relatively healthy for a cookie, and guaranteed to make the party!
