I've recently become enamored of polenta. I've had it before, of course, but eating meatless for a few weeks made me bring it back into my diet and I'm so glad I did. This Italian cornmeal is versatile, vegetarian, gluten-free (!!!) and a great option to add to any meal, whether it's meatless or not. Pick up a tube of prepared polenta at the grocery store if you don't have a lot of time, or make a batch yourself if you want to get really authentic. Either way, any of these six polenta recipes would be a tasty, hearty addition to your table.
