9 Healthy Squash Recipes That Will Change Your Fall Forever

It’s squash season! Didn't know that was a season? Well now you do! The plump and juicy gourds are turning up everywhere right now, so we figured it was high time that we supply you with some recipes.

1.  Quinoa Stuffed Acorn Squash

When it comes to dinner time during the fall season, this has to be one of my favorite recipes.  Acorn squash can be stuffed with anything from quinoa to turkey, so don't be scared to get crazy.

2.  Butternut Squash Risotto

One word – RISOTTO.  Unless you’re Rachael Ray, risotto is definitely a tough recipe to conquer.  However, when it's done right, it is delicious.  This particular recipe is vegan and contains butternut squash with seasonings like thyme, sage and rosemary.  It's very savory and melts in your mouth!

3.  Kabocha Squash Pancake

In the words of Guy Fieri, “This is out of bounds.”  Kabocha is an Asian variety of a winter squash.  Skip over that container of Bisquick in your cabinet and make some fresh kabocha squash pancakes to start your day.

4.  Buffalo Chicken Spaghetti Squash

It's football season.  Buffalo-flavored anything is pretty much fair game.  Try out this spaghetti squash and buffalo chicken next time you're watching a game with friends.

Butternut squash soup is usually found on every fall and winter menu across the board.  It's quite easy to make and extremely flavorful.  They’ve made this recipe with roasted maple chickpeas to give it a special touch.

Did you really think I wasn't going to include a cupcake recipe?  Apparently you can make cupcakes with anything nowadays.  And guess what, I'm not complaining.

When it comes to cold weather food, curry is on the top of my list.  You almost forget it's 40 degrees outside when you’re sweating from eating those spices.  This recipe combines kabocha squash with brown rice and curry.  Pack this one full of hearty vegetables like cauliflower and carrots to make a fantastic stew.

9.  Roasted Squash and Tahini Sauce

This recipe combines acorn squash with delicate squash to create a winter medley! Not convinced of its deliciousness. Well it also has tahini in it, making it more than just basic roasted vegetables.
